Its origin is rooted in the rhythms of agricultural life: families prepared Maarouta during the olive harvest season, when new olive oil was abundant and communal work brought people together. Semolina is soaked in butter for three days to guarantee soft, crumbly texture and date paste is kneaded with fresh olive oil, fennel, and anise to create a luxurious yet humble treat.
Ingredients: Hard durum semolina, Butter, Dates, Olive oil, Nigella seeds, Sesame seeds (can be made without upon request). No sugar added.
