Keshkul - Almond pudding

Keşkül-ü fukara‍, meaning bowl of the poor, is rooted in the spiritual devotion and communal care of the Sufi Dervishes of the Ottoman Empire. Whirling dervishes carried a keshkul, a distinctive silver begging bowl, while performing their sacred Sema rituals, collecting alms from onlookers. The gathered sums were used to prepare a humble yet nourishing food: almonds slowly simmered in milk for many hours. This preparation was then distributed to the poor, embodying the dervish ideals of humility, generosity, and asceticism.

We flavor our pudding with mastic, mehleb, and orange blossom water, and top it with pistachios.
